We have selected a single malt that has been entirely matured in a Pedro Ximénez cask. This cask was filled on the 4th January 2016 and we disgorged it on the 23rd October 2024 with an outturn of 252 bottles at cask strength 58.3% ABV.

After almost nine years ageing inside the ex-sherry cask, our spirit has taken on a beautiful deep, dark brown sherry colour. It is bursting with flavour with sweet, icing sugar notes and an underlying hint of fig and red berries. Despite being very rich and flavourful, it also has a slightly dry mouthfeel coming from the European Oak. 

Our team were all blown away by the quality of this single malt. It is the dream dram for those who love heavily sherried whiskies and at 58.3% ABV, it is certainly one to be savoured. We hope you enjoy it as much as we did, and we can’t wait to hear what you think.
