Straight from the stills at 63.5% ABV, our New Make Spirit is the pre-cursor to our Single Malt - before the oak casks, before the ageing process, before it's a Scotch Whisky.
The flavour profile is intentionally grassy, fruity and floral - owing to our carefully curated distillation process. We use local Fife Laureate barley, M-type yeast, and a 72-hour fermentation.
Our wash still is onion shaped, and our spirit still has a boil ball - the former preserves the fruity flavour compounds from fermentation and latter increases copper contact to make the spirit light and grassy.
The result is a truly special New Make which lets you sample the building blocks of our whisky. It also lends itself well to mixology, starring as a replacement for Tequila in a Margarita.
