EDEN MILL’S SUSTAINABLE FUTURE

OUR MISSION

We want to lead the way for sustainability within the drinks industry in Scotland, and are doing this by innovating in every area of our business. By constantly adapting, we are working towards a greener business model and more sustainable future for distilleries in Scotland.

With Scotland’s aim of reducing emissions by 75% by 2030, we believe it is important that all industries contribute to achieving this figure. Here at Eden Mill, we try our best to responsibly source our ingredients from as many local venues as we can.

A report on mindful drinking uncovered that one third of shoppers try to buy products that are environmentally friendly, this confirms that consumers are definitely concerned with how their product choices are affecting the environment.

SUSTAINABILITY AT THE CORE

We always want to ensure that we are doing what we can to have as little impact on the environment as possible. It is important that we always use biodegradable cups when we are offering samples and tastings. Also, our aluminium bottles for our mixology range are easily recyclable, sustainable and environmentally friendly.

A main step we have taken to ensure that Eden Mill and our customers have as little impact on the environment as possible is by moving away from ceramic bottles to a new recyclable glass bottle.

PASSION AND INNOVATION

These bespoke bottles have been exclusively designed for Eden Mill and produced in the UK, resulting in a low carbon footprint. They are easy to recycle and use 18% less glass than an industry-standard glass bottle – so there is actually less glass to begin with!

The new 70cl bottles which use 18% less glass than other industry standard bottles, are lighter and more easily recycled than Eden Mill’s original ceramic bottles, which have been synonymous with their brand identity and award-winning craft gin.

We launched nine new premium gins in a significant bottle redesign resulting in a major step forwards in our journey to carbon neutrality. The new premium range showcases Eden Mill’s passion for innovation and experimental product development, combining locally sourced botanicals with inspiration and influences from across the world in a series of quality expressions to appeal to every palette.

Each Eden Mill gin has its own story; depicted beautifully with words and a unique woodcut style print commissioned by Eden Mil’s design agency, Tangent, upon the label of the new bottles. The new more sustainable glass design has been crafted and produced by wholesale bottle merchants Croxsons.

FUTURE PLANS

Passionate about craft and our future, by 2023 Eden Mill will open Scotland’s first carbon-neutral single malt whisky distillery in St Andrews.

The state-of-the-art distillery will be located within the University of St. Andrews’ Eden Campus; power and heat for the stills will be supplied by the University’s biomass plant and solar panels on the distillery’s roof. This aligns with our mission to decrease our carbon footprint as much as possible.

HIP FLASK 16 & 17

Hip Flask 16

Pale Malt Spirit aged in an ex-Islay Whisky refill cask. Filled on 04/02/16.

This Hip Flask release has been created by ageing our Pale Malt Spirit in an ex-Islay Whisky refill cask. This ex-peated cask has been used to showcase the amount of peat flavour the cask itself can contribute to the spirit. This whisky has a dry, almost wood-smoke aroma, along with hints of cereal and hay. The level of peat is mild/moderate, with the emphasis on the woodsmoke bonfire-ember character of the liquid.

Hip Flask 17

Peated Malt Spirit aged in a refill Bourbon cask. Filled on 20/07/16.

This Hip Flask release has been matured in a refill Bourbon Cask. This whisky has a pronounced, phenolic peaty aroma. With a rich level of peat, this liquid has a robust earthiness along with a dense, peat-smoke flavour. This is then lightened with spicy oak and sweet vanilla character from the bourbon cask.

We invite you to explore these progressive Single Cask expressions and find your favourite today.

CASK STRENGTH

We kept aside a very limited number of our 2021 Cask Strength Single Malt Whisky for Burns Night celebrations, with the rest of the 200 bottles sold out.

This Eden Mill Single Malt is crafted using a perfect marriage of first-fill bourbon casks and ex-oloroso sherry casks, incorporating spirit distilled using pale malted barley, drawn at cask strength. The result is a beautifully rich dram that carries notes of caramelised pears and fruit crumble with undertones of hazelnut praline and a long-lasting peppery finish.

This is the last chance to purchase this release and add to your collection!

2021 SINGLE MALT SCOTCH WHISKY

Our St Andrews day release, 2021 Release Single Malt Whisky is still available, with a small quantity remaining.

This small batch of Eden Mill Single Malt is crafted using a perfect marriage of first-fill bourbon casks and ex-oloroso sherry casks, incorporating spirit distilled using pale malted barley. The result is a beautifully rich dram that carries notes of caramelised pears and fruit crumble with undertones of hazelnut praline and a long-lasting peppery finish.

PREMIUM GINS

Inspired by local legends and made using botanicals from the Scottish coast, our classic Original Gin and Neptune Gin celebrate Scottish heritage.

NEPTUNE GIN

This is a coastal-inspired gin with Kombu seaweed. With a focus on a light salinity with a fresh, herbal profile such as samphire. Distilled with Scottish seaweed in order to give a hint of brininess along with a gentle smoky/seashore character.

Best served with a premium or Mediterranean tonic, garnished with a lemon peel. Neptune Gin can be used to make a classic Martini with a St Andrews twist.

ORIGINAL GIN

Original Gin is our take on a classic London dry – with a twist. Our St Andrews distillery is on a particularly tempestuous Scottish coastline, so we were inspired to create our first gin using sea buckthorn berries, an exceptionally hardy superfood that thrives in harsh, salty, coastal conditions. The unique tart berry flavour is abundant but we balance the gin around it using citrus elements drawn from the other botanicals, such as lemon balm and citrus peel.

Perfectly served with a premium tonic and grapefruit slice or try making a Paloma cocktail.

EDEN MILL LAUNCHES 2020 SINGLE MALT SCOTCH WHISKY ON ST ANDREWS DAY

Award-winning distillers Eden Mill have unveiled an exclusive limited edition 800 bottes of its 2020 Release Single Malt Scotch in time for St. Andrews’ Day.

Retailing at £85, the 2020 Release is the fourth single malt whisky by Eden Mill in three years, since the unveiling of the first bottling in 2017 from their distillery just outside St Andrews. The whisky liquid incorporates bourbon, Pedro Ximenez and Oloroso barrels as well as spirit
distilled using pale, chocolate, brown and crystal malt barley. This expression is reminiscent of light vanilla and toasted cinnamon leading into a spiced fruit finish. Collectors can buy the bottle on its own or as part of a special Eden Mill whisky hamper alongside two new additions to Eden Mill’s hipflask series.

Scott Ferguson, Eden Mill’s head distiller, spoke about the 2020 batch:
“The liquid we have crafted pushes the boundaries of our previous whisky expressions. This small batch of Eden Mill single malt showcases the evolution of cask and spirit, bringing you light vanilla and toasted cinnamon from bourbon barrels, combined with the rich fruit and
subtle spice from our distinctive range of sherry casks, leading to a creamy biscuity finish.”

The launch of Eden Mill’s 2020 Single Malt comes as the distillery celebrates a successful year of sales, with an increase of 600 percent year on year from online sales. Tony Kelly, co-founder of Eden Mill said: “This limited release is a real reflection of the team, our passion and Eden Mill’s pioneering spirit
which has stayed strong throughout 2020. We can’t wait for people to enjoy a dram of our 2020 Single Malt Scotch safely at home this festive season.
We anticipate the new year with excitement and hope as we look forward to the relief a vaccine will bring and also the completion of our new carbon neutral single malt distillery in St Andrews, which will be the first of its kind in Scotland and a significant step in our Eden Mill journey.”

2020 SINGLE MALT SCOTCH WHISKY TASTING NOTES

Nose: Sherry fruit forward, with bright fruity notes of raisin and plum and a lively oak spice alongside. Under these sweet notes is a creamy maltiness and light hint of apricot.
Taste: Peppery spice initially, with rich raisin and date sweetness. Spice persists as the sweetness begins to fade, with hints of toasted cinnamon and light vanilla sweetness towards the end, reminiscent of butterscotch candy. Finish: As the spice fades, hints of roasted malt and crumbly shortbread linger. Sweet and spicy notes balance to leave a gentle apricot fruit and subtle cassia spice.

Follow our journey – what we’ve been up to!

WE SAID GOODBYE TO OUR OLD HOME

May 2018 marked the end of an era at our home in St Andrews. Since Eden Brewery started in 2012 we’d been based in a small section of the old Guardbridge Paper Mill, and over the years had tacked on some extra areas, improved our shop, and upgraded our production kit.

By late 2017 we were bursting at the seams and pressed on with plans to relocate our brewery & distillery to the opposite side of the site into a lovely old building overlooking the Eden Estuary. This meant saying goodbye to what had been our home for five years. The place where our brewers created the range of beer that is often seen in bars throughout St Andrews. The place where our, now award winning, range of gins were devised, refined, and perfected. The place where we filled the first cask of single malt whisky in St Andrews for over 150 years. And a place that we’ve proudly shown 16,000 visitors around on tours, where they’ve met the wonderful team of people who’ve made all of these things happen. It was a sad moment when we closed the doors for the final time.

WE OPENED THE GATEHOUSE

But the prospect of being able to expand upon what we’d achieved gave us all a new focus, and we set about making plans for the future. This meant some creative thinking in the short-term while construction was underway, and thus Gatehouse was born! Right on Main Street in Guardbridge, directly across from the famous Mill clock, we secured an area to use for our pop-up shop and tastings that would allow us to continue to offer an experience to visitors while our production space was being renovated a few hundred meters across the road.

We sourced shipping containers and set about converting them into our new shop and tasting rooms, which drew upon our teams secondary talents such as joinery and gardening! Fortunately, we’ve got quite the talented bunch who put in a few long shifts to make sure we were open in time for the summer.

In July, we opened the Gatehouse and resumed where we’d left off – offering beer, gin and whisky tastings, sharing our story with visitors, and giving away some sneaky details about what’s going on behind the scenes with our permanent site move. We launched our Summer Punch Gin, and The Gatehouse was an ideal place to sit and enjoy it in the sunshine.

We even made time for some mini-golf between tastings!

It was fantastic to see visitors enjoying what we were doing, despite not being able to see our brewery/distillery. 1500 people visited us over the summer, and we found that we actually hadn’t gone big enough with our pop-up! An upgrade was needed, and so we decided to renovate our space once more. Lots of ideas were thrown around, but we wanted something unusual, that would do the things that Eden Mill have always been good at – being creative and making an instant impression!

NOW WE’VE OPENED THE DOMES…

Our new custom-built structures arrived in February and gained instant attention from local passers-by on Main Street. Buses, taxis and pedestrians all gave a bemused look as they passed, which was exactly what we were hoping for! Our team set about building the giant jigsaw puzzles that were to become our two new geodesic domes. The build took around four days, and we were delighted with the results.

This now gives us more capacity to host tastings with guests, and a place to showcase not only our story so far, but the future plans. It creates a space we are excited to show people, and somewhere we know our visitors will enjoy spending an hour or two with us sampling beer, gin or whisky.

From 10th April we’ll be running daily tastings at Gatehouse, focused around either gin or beer & whisky (combined). These will be an hour long, and have been put together from scratch by our team. We’ve thrown the old format and scripts out and started again, thinking about what we want to tell visitors about our journey and how we can share some secret details about our new permanent site as it’s being constructed.

We’ve worked hard over the past nine months to put together something different to really show people what Eden Mill is all about, and we cannot wait to welcome our first guests this summer. There really is no better place to enjoy a sample while you pick the brains of one of our team, so we sincerely hope you’ll come along for a visit this year. Whether you’re a whisky connoisseur, a gin aficionado, or a beer enthusiast, we very much look forward to seeing you!
