Pale Malt Spirit aged in an ex-Islay Whisky refill cask. Filled on 04/02/16.
This Hip Flask release has been created by ageing our Pale Malt Spirit in an ex-Islay Whisky refill cask. This ex-peated cask has been used to showcase the amount of peat flavour the cask itself can contribute to the spirit. This whisky has a dry, almost wood-smoke aroma, along with hints of cereal and hay. The level of peat is mild/moderate, with the emphasis on the woodsmoke bonfire-ember character of the liquid.
Peated Malt Spirit aged in a refill Bourbon cask. Filled on 20/07/16.
This Hip Flask release has been matured in a refill Bourbon Cask. This whisky has a pronounced, phenolic peaty aroma. With a rich level of peat, this liquid has a robust earthiness along with a dense, peat-smoke flavour. This is then lightened with spicy oak and sweet vanilla character from the bourbon cask.

This Eden Mill Single Malt is crafted using a perfect marriage of first-fill bourbon casks and ex-oloroso sherry casks, incorporating spirit distilled using pale malted barley, drawn at cask strength. The result is a beautifully rich dram that carries notes of caramelised pears and fruit crumble with undertones of hazelnut praline and a long-lasting peppery finish.

2021 SINGLE MALT SCOTCH WHISKY
Our St Andrews day release, 2021 Release Single Malt Whisky is still available, with a small quantity remaining.
This small batch of Eden Mill Single Malt is crafted using a perfect marriage of first-fill bourbon casks and ex-oloroso sherry casks, incorporating spirit distilled using pale malted barley. The result is a beautifully rich dram that carries notes of caramelised pears and fruit crumble with undertones of hazelnut praline and a long-lasting peppery finish.
Inspired by local legends and made using botanicals from the Scottish coast, our classic Original Gin and Neptune Gin celebrate Scottish heritage.
This is a coastal-inspired gin with Kombu seaweed. With a focus on a light salinity with a fresh, herbal profile such as samphire. Distilled with Scottish seaweed in order to give a hint of brininess along with a gentle smoky/seashore character.
Best served with a premium or Mediterranean tonic, garnished with a lemon peel. Neptune Gin can be used to make a classic Martini with a St Andrews twist.
Original Gin is our take on a classic London dry – with a twist. Our St Andrews distillery is on a particularly tempestuous Scottish coastline, so we were inspired to create our first gin using sea buckthorn berries, an exceptionally hardy superfood that thrives in harsh, salty, coastal conditions. The unique tart berry flavour is abundant but we balance the gin around it using citrus elements drawn from the other botanicals, such as lemon balm and citrus peel.
Perfectly served with a premium tonic and grapefruit slice or try making a Paloma cocktail.
